Cocoa powder 20-22% - organic / fair trade
Our organic, fair trade and zero deforestation cocoa powder is produced exclusively from Trinitario beans from the Dominican Republic.
It is therefore a high quality cocoa with an intense flavor and fruity notes.
The 20-22% version indicates the fat content, in this case cocoa butter. It is therefore a non-defatted cocoa, richer than 10-12% cocoa.
Our cocoa powders are "alkalized", meaning they contain a small proportion (2.5%) of potassium carbonate. Generally used as yeast in baking, it is used in this case to make the cocoa more fluid. Our cocoa is thus easier to dissolve and can be used in your hot chocolates and other recipes. Admitted by organic regulations, this additive is considered harmless even by the most critical food additive sites.
